The Giggling Squid Restaurant

The taste of Thai at the 'Giggling Squid', will have you wanting and 'giggling' for more. An idea formed by a couple in Brighton, who wanted to create authentic, fresh Thai dishes from tapas, to curry, to stir fry, fish, noodles and so on. They also do desserts and vegan dishes. Starting off from not having much money and no idea where it would lead them, their hard work and dedication has paid off and now they have stabilised a chain of restaurants dotted around the UK. Living in Gloucestershire I went to the one in Cheltenham, which is based at the top of Montpellier Street. Other places where it is located are Bath, Chichester, Oxford, Windsor, Wimbledon, Clifton and many more. As well as paying for an exquisite meal you are also paying for a beautiful interior experience, as it is covered in beautiful flowers, bright colours, authentic wall art and rustic wooden features.

I have to thank my sister, Claudia for recommending this place, we went there with my mum and dad on Father's Day and it was such a treat, we all really enjoyed it. As we went for lunch time there was the choice to have tapas, so I had the 'Hungry Squid' tapas, which comes with chicken green curry, chicken satay, mixed vegetable stir fry and jasmine rice. This dish made me fall in love with Thai food, it was so delicious, especially the chicken green curry, which I tried to recreate a few days later when I got home. It was yummy but not good as the Giggling Squid! Pricing is reasonable as well ranging from £2.00 to £16.00 for food.

Spring is slowly heading into summer in the UK at the mo, but as I am writing it is currently pouring down with rain and is very cold - classic. To be fair though it has been hot and sunny in the last few weeks, if you count 25℃ as hot, haha only in England. Anyway, I thought I'd share with you on how to make some homemade elderflower cordial, because it's that time of year and we actually have elderflower growing in our garden, which is such a revelation because we are not natural green-fingered people at home.
