Spring is slowly heading into summer in the UK at the mo, but as I am writing it is currently pouring down with rain and is very cold - classic. To be fair though it has been hot and sunny in the last few weeks, if you count 25℃ as hot, haha only in England. Anyway, I thought I'd share with you on how to make some homemade elderflower cordial, because it's that time of year and we actually have elderflower growing in our garden, which is such a revelation because we are not natural green-fingered people at home. If you don't have an elderflower tree/bush at home, then why not take a walk, you'd be surprise how much elderflower there is outside your front door! It's becoming increasingly popular in our daily breakfasts and even dessert. I have recently loved adding this delicious oat, fruit and sweet blend into my food, especially smoothie bowls! Of course I love eating this combo for the taste, but also because it fills me up and I'm someone whose appetite is ridiculous and it takes something special like this to do the job! It's cloud coffee timeeeee!!!!! There is nothing better than spending an afternoon on FaceTime with ya big sis trying out this craze that's been floating around online. This fun drink is basically an iced coffee with a strong, sweet coffee whip on top. I have used Holly Jade's recipe 'Biscoff Cloud Coffee' from her blog called @TheLittleBlogOfVegan and I'll leave her website and Instagram page below, because she makes the most artistic and aesthetic bakes to look at! Falafel Salad 'The Find' and what a find it was! Based in Regent Street, Cheltenham is where you'll find (there I go again 😂) a unique, delicious, independent fresh coffee house and kitchen. Serving breakfast, brunch, lunch and afternoon tea you will be leaving with a very satisfied appetite. I have been here a few times and the food has always been up to high standard and it has a cosy and casual, yet fine dining atmosphere. What I mean by this is that the upstairs is laid out into two sections. One room contains casual, slightly slouchy seating which circulates around individual small tables and has some stereotypical cafe seating at the back. This is great for socialising with friends or simply grabbing a quick bite on your own. This space is also useful if you want a great place to study. Quick Homemade Tomato Soup

It's that time of year for some warming soup. Below is a super quick recipe on how to make my homemade tomato soup. You could whip this up in the evening and put it in the fridge for the next day or make irt in the morning ready for the day ahead. Ingredients: 1 Tin of Chopped Tomatos 1 Roasted Red Pepper from a Jar 1tsp Bouillon Powder 1tsp Mixed Herbs 6-7 Basil Leaves 1tsp Turmeric Salt and Pepper   Put all of the ingredients into a blender and wizz up for 1 minute. I personally use the Ninja blender, as it blends everything so smoothly. Once all the ingredients are blended put it in a saucepan or microwave and heat it up.   Serve up with bread and butter. I recommend focaccia, yum, yum! Hope you enjoy!

Pancake Madeleines coated in Nutella and Chopped Roasted Hazelnuts

Pancakes have always been one of my favourite things to eat. It was always a sweet treat to look forward to at the weekend when I was a child, I remember waking up to the sweet smell and I knew that my mum was busy downstairs baking us all up a treat. Recently my mum bought a madeleine tin to make traditional madeleines, which I had never had before and omg they were amazing! Then one day the random thought of pancakes shaped like madeleines popped into my head, who knows how or why😂? Anyways I thought I would try making a slightly thicker batter than my usual pancake consistency and luckily they worked and were a huge hit with the family. Ultracomida Spanish Delicatessen

Ultracomida is an authentic Spanish Delicatessen in the heart of Wales, which is very random and I love it because it adds a fun twist to the Welsh towns. So if you are wanting fluffy patatas bravas, crunchy fresh fish, a traditional Spanish tortilla, a super thick creamy Spanish hot chocolate and much more then don't hesitate for a moment if you spot an Ultracomida!   It's a small chain, as there are only three of them. One is in Narberth and the other two are in Aberystwyth and Cardiff. The one in Cardiff is actually called Curado Bar, which is slightly different to the other two as the layout isn't a delicatessen or restaurant, it's a modern, industrial bar but serves the same authentic Spanish food and drink. A unique, independent restaurant located at 'St George's Place' in the heart of Cheltenham town, the Muse Brasserie restaurant is a fusion of European food, mixed with an English and Indian cuisine, who knew that those combinations would marry so well!
