Banana French Toast with Nutella



French toast is a classic yummy treat to have for breakfast and I feel ashamed to say that I haven't had a lot of it in my life and god knows why because it's so delish! I've always been more of a pancake kinda gal and my favourite toppings are nutella with bananas, so I then thought why not have a banana french toast mixture with nutella for the filling, yum yum! Below is the recipe and I hope you enjoy.

There's enough mixture for two slices of bread.

Ingredients:
  • 1 Very Ripe Banana
  • 1tsp Vanilla Extract
  • 140ml Milk
  • 1 Egg
  • Sprinkle of Nutmeg
  • Something to grease the pan (butter or I use coconut oil spray)
  • Nutella
  • Roasted Chopped Hazelnuts (optional)

Instructions:

Step 1: First get your banana, if it is already very ripe skip this next step. If your banana is yellow like mine was, get a knife and make a couple of slits in the middle of the banana with the skin still on and put it in the microwave for 50 seconds to 1 minute or until it starts to turn brown/black. You can also put the banana in the oven instead at 180℃ fan for about 5-6 minutes. The more ripe the banana is, the sweeter it will be!


Step 2: Get a dish out and pour in the milk and then add the vanilla extract, the egg, and sprinkle a bit of nutmeg in as well. Give it a mix with a fork until it is all combined.


Step 3: Next peel the skin off the banana and mash it with the back of a fork and tip it into the milky mixture and stir. Then get a slice of bread and put it in the mixture for 30 seconds to 1 minute and then tip it over on the other side and soak for the same amount of time. Make sure to scoop some of the banana on top of the bread if it isn't sticking.



Step 4: Grease your pan and put it on a medium heat on the hob. Place the soaked slice of bread in the pan, make sure to do it carefully so that it doesn't tear apart. Cook it until both sides are dark brown and feels crispy.

 

 

Step 5: Once you have cooked two slices, spread the Nutella on top and sandwhich them together, or you could have a single piece and spread Nutella on top with a sprinkle of roasted chopped hazelnuts.
