Chocolate, Orange and Coconut health bars
I've finally concocted a recipe that tastes pretty similar to one of my favourite chocolates, which is Terry's Chocolate Orange. However, the good thing about these bars is that they are healthy. They have a crunchy texture combined with a gooey flavoursome taste. These are raw, so you don't need to cook them, just pop them in the fridge to solidify slightly and then you're good to go. Ingredients:
- 250g medjool dates or sweet and jammy dried pitted deglet nour dates
- 150g walnuts
- 40g oats
- 20g desiccated coconut
- 20g coconut flakes
- 20g cacao powder
- Zest and juice of a big orange
- 2tbsp olive oil
Equipment:
- Food processor
- weighing scales
- Juicer
- Table spoon
- Grater
- Grease-proof paper
- Grease-proof tin, width: 18cm, depth: 3cm
Instructions:
Step 1: First of all get your scales and weigh the dates. Make sure that you get rid of the stone in your dates if they contain them. After put it in the food processor.
Step 2: Next, weigh the walnuts along with the oats, desiccated coconut, coconut flakes and cacao powder and pour it into your food processor.
Step 3: After, get your orange and grate the zest into your food processor, then cut your orange in half and then use your juicer. Once you've done that pour the orange juice into your food processor.
Step 4: Next put your olive oil in the processor and wiz up the ingredients. Make sure to pulse first before fully mixing.
Step 5: Once you have a combined mixture get your tin and put your grease-proof paper in and start to spoon your mixture in. Flatten the mixture down with the back of the spoon and pop in the fridge until it has solidified slightly.
Step 6: Once that is done take it out of the fridge and cut it into squares.
These are also a great snack to have once you have done some exercise. For instance, my sister and I have just ran the 5k run for Race for Life today in Cheltenham and it was such a good pick me up. I think they said that in total we raised over £90,000 which is amazing!
